Cooking Up Comfort

In my last post I mentioned that going forward I will be posting on only happy, healthy, or helpful topics. Comfort food equals happiness, doesn't it? With all of us cooking more, and everyone at home together, it's time for some feel good food. Please don't forget the secret ingredient ~ a heaping spoonful
of love!

Gruyere Mac And Cheese
With Caramelized Onions
If you have not used Gruyere in your mac and cheese, you truly are missing out. The caramelized onions are another ingredient I would never skip. They add a certain sweetness to this cheesy dish. Super good!

Easy French Onion Soup
One of my favorites! The trick to an amazing French Onion soup is the slow process of caramelized onions. We have the time now, my friends.

Chicken Pot Pie
Comfort food at its' finest! This recipe features a creamy filling with chicken, peas, potatoes, and carrots. It's all topped off with a homemade
pastry crust. My kind of comfort.

Baked Spaghetti And Meatballs
A comforting crowd pleaser! And it's a recipe that the entire family will enjoy.

Cinnamon Sugar Brown Butter Popovers
A good popover is hard to beat. When they are warm, they just seem to melt in your mouth. I can just imagine how good these are after being generously brushed with melted butter and rolled in cinnamon sugar. Hello breakfast!

Hot Chocolate For One
Don't forget to treat yourself! There's nothing quite like a big mug of hot liquid chocolate. It's made with high quality cocoa. And don't forget
 the salt!

Teddy Bear Snickerdoodles
Don't we all just need something that makes us smile? These sweet and salty cookies will bring out the child in all of us. And get the kids to help you. They will love the experience.

Bourbon Sloppy Joes
Gosh I haven't had one in years, might have to make this recipe. The ground beef is mixed with a tomato bourbon sauce. The entire recipe is a twist on an American classic.

Shepherd's Pie
I've never had this casserole, but have always wanted to make it. Talk about meat and potatoes!

Stuffed French Toast
Breakfast for dinner has always been comforting in our home. Children love it, too. I have been making French Toast since I was a young child. But I had never had it stuffed until experiencing it at The Belvedere Mansion in the Hudson Valley. All I can say, it is a killer dish. Just try it.

Creamy Tomato Soup With Grilled Cheese Croutons
Everyone's favorite soup and sandwich all in one bowl! Cute as can be.

Banana Pudding
Oh does this remind me of my parents! My mom made it often, and my dad couldn't get enough of it. I loved it, too. It's made with old fashion vanilla wafers! Now I want some. Recipe courtesy of Trisha Yearwood.

Fried Chicken And Waffles
For some, but not me, this is comfort food royalty. Some would say it is the modern cheat meal. This recipe begins with a buttermilk brine for the chicken thighs. There's a sweet touch to every savory bite thanks to the
pure maple syrup.

PS. My spell checker went missing today....so please forgive any spelling errors. I was left to my own devices.
