Foodie Friday: Cooking With Tomatoes ~ Recipes & More


It's now or never, for taking advantage of Summer's bounty of fresh tomatoes. After September, good tomatoes are hard to find for some of us. While writing this post I learned that I have been storing mine all wrong. Click HERE to see if you are guilty, as well. I think we all can use another chicken recipe in our repertoire. For this dish you marinate the chicken, sear the chicken, cover the chicken with one little piece of cheese, bake it, and top it with the bruschetta and balsamic glaze. And there you have a great warm weather dish.

This recipe has my name all over it. I made myself a lobster risotto on my birthday this year. It was fabulous but took patience. Worth it. A great recipe to make for transitioning from Summer to Fall.
