16 Green Recipes To Get You Excited About Spring

Happy St. Patty's Day! Today we are all a little bit Irish, and we are also thinking spring. So this Foodie Friday is all about spring greens. Think, artichokes and arugula,  pesto and pasta, pea soups and salads. Oh and a green cocktail, too. Let's get cooking!


Shamrock Juice Cocktail Recipe
Anything Irish, including this post, should start off with a cocktail. This beats a shamrock shake in my opinion. It features three different liquors. The method of pouring this drink is key. Click the link to see how.

Dahi Dal (Yogurt Lentil Curry With Spinach)
Is this not the most beautiful dish? I bet it tastes as good as it looks. 

Watercress, Apple, and Farro Chicken Salad
This salad had me at the Creamy Avocado Dressing! It's a beauty, and doesn't it look fabulous?

 Caprese Grilled Cheese Sandwich with Arugula Pesto 
This sandwich starts with a rustic sourdough bread. That ingredient alone might tempt me to take a bite. I think that I will bookmark this recipe until tomatoes start tasting better. But it is going to be made!

Grasshopper Ice Cream Pie
Well, if this isn't an Irish looking dessert! It's made with store bought mint chocolate chip ice cream, but I would probably make my own.  It's an easy fix that will taste very special.

Roasted Romanesco
Romanesco is a better looking cousin to Cauliflower and Broccoli. I have had it, but never cooked it. This recipe roasts it up with shallots, garlic, and lemon zest. Then it is served with Italian Salsa Verde and Calabrian Chilies. Doesn't that sound amazing?

Even if you don't like salmon, the recipe is worth checking out for the green goddess sauce. This burger is an avocado lovers delight. 

Whole Wheat Spinach and Artichoke Pizza 
This is a quick fix (30 minutes) delight! It just screams spring.

Spicy Shrimp and Avocado Salad With Miso Dressing
This surely is the happiest green salad ever! It makes me smile just looking at it.

Low Carb Pistachio Mousse
This recipe uses all natural ingredients and almond milk. It looks so light and fluffy, and that is from the heavy cream. The carb total is only 5 grams, which is practically nothing. 

Minty Pea Soup
Spring in a bowl! The recipe calls for either fresh or frozen peas. I see no reason to go to the trouble of cooking fresh peas. Using frozen makes this soup not only beautiful but efficient, too.

Asparagus With Goat Cheese & Balsamic Drizzle
This is how I serve asparagus, and it was the way our favorite, Bice, in Chicago served it. If cooked properly, it can be enjoyed warm or cold. I will add that I think more goat cheese is needed.

Easy Pesto Pasta
They say that this is an easy five minute dinner. It takes me five minutes just to get a pot out. But it sure does look wonderful.

Pistachio Ice Cream
Haven't had it in years, but pistachio ice cream is unbelievably delicious. It's made with coconut milk! This recipe does need an ice cream machine.

Frittatas are always so versatile. They are equally as enjoyable sserved warm or at room temperature. The cheese used is ricotta. A beautiful brunch dish!

Herb-and-Lemon-Poached Baby Artichokes
With over 3,500 five star reviews, this recipe really got my attention. The artichokes are infused with fabulous flavor from the poaching liquid. Think lemon, herbs, and olive oil. YUM!
