Foodie Friday:: Fiesta Fabulous Recipes


This weekend is a food lover's dream while we celebrate both the Kentucky Derby and Cinco de Mayo.  I opted to feature Mexican. Really because Margaritas always beat Mint Juleps in my world. This recipe roundup has everything you need to create your own Mexican celebration.  There's even a couple of recipes that you didn't know you would love, like guacamole with cherries, and a smoking margarita. It's all very 
fiesta fabulous.

Mexican Shrimp Cocktail
Otherwise known as "Cóctel de Camarónes." What's not to love about giant shrimp in a spicy tomato sauce? It sure puts the average shrimp cocktail to shame.

Queso Fundido with Charred Poblanos

One of my favorite Mexican dishes. This recipe puts the "fun" in fundito.  Serve with sides other than tortillas, like roasted fingerlings, cherry tomatoes, and sweet soppressata for dipping in the cheese. 

Grilled Pork Tenderloin in Charred Chili Adobo
Doesn't this image make you want to fire up the grill? The key to the success of this recipe is really burning the spices and chilies. This is my idea of a feast.

Changing up a recipe is the fun of cooking to me. In fact, I rarely make the same thing twice. This guac is so unique, I think it needs to be tried. It's a sweet and savory dip with Italian blue cheese, red onion, jalapeno, toasted walnuts and honey drizzled on top. WOW!

Mexican Steak Cobb Salad With Cilantro Vinaigrette
A Chicago restaurant named Doc B's makes a delicious Cilantro dressing. The meat used here is a nice lean cut, and has been super marinated. This salad makes healthy eating the 
best thing ever.

Smoking Blackberry Sage Margarita
This will get the party started. Can you say Olé? The smoke that you see comes from dry ice. With orange bitters, fresh lemon juice, blackberries, dried sage, and tequila, how can this be anything but good?

Mexican Shrimp Ceviche
In case you don't know, Ceviche is a dish that is seafood served cold. It is made with raw fish that has been "cooked" in an acidic marinade. It is South American in origin, but it is also a Mexican staple. A fresh and bright dish with all of the flavors of Spring and Summer.

These are sweet, spicy, and smoky. They are stuffed with  with lots of gooey cheese, cauliflower, smashed avocado, and zesty lime. Oh my!

Honey & Smoke Mezcal Cocktail
So I had my first Mezcal cocktail on last Christmas Eve. Birthday Girl, Miss Shop This, ordered it for me. Oh my goodness I loved it! This cocktail is both sweet and a little smoky. Heaven!

Grilled Guacamole With Cotija Cheese
Have you ever grilled an avocado? I have not, but can imagine that it is very good...and smoky. All that is included in this recipe is guacamole, red onion, jalapeno, lots lime, and cheese.

Arroz Con Leche { Vegan }
You may have guessed, this recipe name translates to Rice Pudding. I just made rice pudding yesterday, but it featured heavy cream, so very much not vegan.  This pudding calls for cashew cream and soy milk.

Doesn't that name have a nice ring to it? I am just sure that Prosecco and Tequila can play nice together. I'm game.

Healthy Mexican Sweet Potato Skins
What could be better than sweet potato skins filled to the brim with roasted corn, black beans, fresh cilantro, sweet potato mash, a kick of spicy chipotle, and a handful
 of melted cheese?

Banana Bread Tres Leche Cake
Said to be super moist thanks to the five different types of milk in the recipe...coconut, sweetened condensed milk, evaporated milk, almond milk, and heavy cream. The butter in the mix is browned, which elevates any recipe. I think that I will try this recipe this weekend

Grilled Corn With Sriracha Aioli
So I always grill our corn and it is covered with mayo, Parmesan Cheese and whatever fresh green herbs I happen to have, As good as it is, this corn looks exceptional! And I never met an aioli that didn't kick "anything" up a notch. There are 10 ingredients, but I think it is worth it.

Lime and Chili Skirt Steak Fajitas
Skirt steak is so good when cooked correctly. It always needs marinating, even if only for 15 minutes, like this recipe. The dish calls for eight limes, so you know that it will be zesty!

Perfect Patron Margarita
Pretty sure that I have featured this recipe before. Anything made with Patron, and as pretty as this drink, deserves repeating. The ingredients are all fresh without any mixes. Now that's what creates the best Margarita!

Foodie Friday: Let's Fiesta!


Two fun holidays are upon us friends, and together they become Cinco de Derby. Catchy, right? Both happen on May 5th. Because a fab fiesta needs a little more planning time, today's post is filled with marvelous Mexican fare.   And of course, you'll find plenty of Margarita recipes, because I adore a good one.
