Make Mom's Day & Serve Her Something Special

Personally, I enjoy cooking. Creating something for others is always an act of love for me. But I may draw the line on Mother's Day, and maybe my birthday. This year if you are lucky enough to be with your Mom, why not make her something special? Find inspiration from these recipes that are oh so celebration worthy.

Raspberry Rose Spritzers
This cocktail is made with sparkling grape juice, so it's good for the non drinking mom. But if your mom enjoys some bubbly, swap out the grape juice for Champaign!

Strawberry Pie With Strawberry Crust
This has got to be the prettiest pie ever! That fabulous color comes from freeze dried strawberries. The recipe tells you where you can get them. Don't let the lattice work crust overwhelm you. If you aren't up to the task, a regular crust will do the job.

Smoked Salmon Spread
Blended with nonfat Greek Yogurt, light cream cheese and fresh dill, this delicious dip (or spread) will be gone in a flash at your next bash.

Crispy Salmon with Strawberry Basil Salsa
If you are preparing lunch or even dinner, this is a healthy choice. First of all, it is so appealing with the salsa! It is also a quick fix, which gives you more time with Mom!

Strawberry Meyer Lemon Tart
The crust is like a shortbread cookie with lemon zest. The filling is the creamiest lemon curd, which I find fun to make. Then there is a layer of strawberry jam. What a delight! You can get the tart pan in time for Mom's Day at Amazon. Find the recipe at....

Minted Mimosa Punch
I usually don't like to dilute my champagne but this recipe is so interesting. It calls for Vodka and Blood Orange Italian Soda! The garnishes make it very special looking.

Seared Ahi Tuna Poke Salad With Hula Ginger Vinaigrette
My favorite shade of pink is inside a perfectly prepared piece of tuna. The flavors of this dish are heavy on the tropics, which is never
 a bad thing.

Raspberry Cheesecake Stuffed French Toast
I haven't had French Toast in years, but gluten and carbs be damned. If served to me, I would eat this in a flash. It's drizzled with hot fudge sauce to boot! Perfect for Mother's Day Brunch.

Spring Cobb Salad
I so appreciate a composed salad. The end result is a work of art. And that is not bacon, it's pancetta. Those pinkish rounds are Watermelon radishes. This is one elevated Cobb Salad.
The Modern Proper

Lemon Pie With Blueberry Meringue
Have you ever? This is the prettiest thing that I have seen all day. Maybe all week. For sugar lovers, meringue is the epitome of a treat. Add blueberries and you really have something special. Blueberries and lemon are a tasty treat. I am a bit obsessed with this recipe. Mom is worth it.

Rice Paper Spring Rolls
Aren't these beautiful? If Mom enjoys healthy eating, she is going to love these. The step by step instructions are something you and Mom can do  together,

Blackberry Lavender White Chocolate Scones
Normally I am not a scone lover, but these look amazing.  Tieghan states that it is hard to mess these up. They do look extra special.

Marinated Goat Cheese Crostini
A super simple recipe that is said to be incredibly good. The thought of the tangy goat cheese alongside the sweet strawberries that have been drizzled with honey,  is mouth watering.

Margaritas, Mexican Food & Moms

Yes, I know that Cinco de Mayo was yesterday, but this Mom could have a margarita and a Mexican meal any day of the year. So for Mother's Day, I present some marvelous Mexican dishes and drinks that will spice up any mom's day.

Blood Orange Margarita
I have made margs with blood oranges several times. Besides being delicious, they are so vibrant in color. You feel as if you are having a fiesta!

Mexican Shrimp Cocktail
At first glance I thought this was a loaded Bloody Mary. Add tequila and then we could call it a drunken shrimp cocktail!

Chicken Street Tacos With Mango Slaw
A crunchy, sweet, tangy lime-mango slaw take these chicken street tacos over the top!

Banana Leaf Grilled Fish with Coconut-Cilantro Sauce
What an impressive platter! The banana leaf imparts a slightly sweet and grassy flavor to the fish. Since this recipe is grilled, they also protect the fish while it is cooking.

Watermelon Margaritas
These chic cocktails are proof that presentation is everything! These are fresh, sweet, and made in a blender.

The Best Shrimp Tacos
Fresh and delicious with a slightly spicy avocado crema. I think I will try this.

Chicken Taco Soup
What a perfect soup to make anytime, but especially on a rainy spring day. This soup is topped off with cheese quesadilla croutons. YUM!

Shrimp and Chorizo Mixed Grill
The creamy dipping sauce sounds divine.
Epicurious

Pink Champagne Strawberry Margaritas
Pink champagne adds a festive flair to these margaritas! Yes, please!

Sun Dried Tomato Bacon Guacamole
I love making a good thing even better by switching up ingredients. This recipe is filled with sweet, salty, and tangy texture.

Tres Leches Cake
The name of this cake means three milks. And true to the name, three different types of milk get poured over this butter cake. Serve it chilled with lots of whipped cream. Love the individual servings.

Instant Pot Mexican Rice
A true Mexican meal will always have a rice dish. This one looks better than most. It's all about the colorful ingredients!

Sweet Potato and Black Bean Mexican Salad
Here's an easy colorful, and healthy salad. Roasted sweet potatoes are a good duo with the veggies. Opposites attract. It can be topped off with a yummy creamy avocado dressing.

72 Handmade Tamales
You guys, these are delicious, and make the best gift. Send them to mom for your next family affair. My extended family loved them over the holidays.
Neiman Marcus

Spiked & Spicy Mexican Mocha Ice Cream
Finding this recipe on a sushi blog was a shock. If you love coffee ice cream, you will adore this recipe. It's infused with tequila!!

Easy Skillet Chicken Tinga Enchiladas
To quote Tieghan, the recipe author: "The most delicious smells, a bubbly sauce, and melty cheese await you as you pull this out of the oven."

Create A Fajita Bar
Now this is a fiesta! Your guests will love helping themselves with this array of Mexican meats, veggies, cheese and dips. Lots of inspiration.

Jorge's Green Chilaquiles
This is a dish I have never tried, let alone made. Chilaquiles are made of crispy corn tortillas cooked in red or green salsa. This recipe features a new twist. Click through to learn more.

Williams Sonoma Margarita Mixes
Get some of these for Mom or your own next party. With flavors like Coconut Lime, Skinny Pineapple, Prickly Pear Lime (oh so good) these mixes turn any cocktail hour into a celebration!

Firecracker Berry Margarita Floats
An all American cocktail that is part drink and the best part dessert. But why wait until the 4th, when you can enjoy this right now?

Cinco de Mayo Recipe Favorites

Raise your hand if you could use a margarita! These trying times are driving everyone to drink, I think.  But my arm never has to be twisted to enjoy a really good from scratch margarita. Thank goodness for Cinco de Mayo, we can all indulge. These recipes will tantalize your tastebuds, and inspire your own
Taco Tuesday.

HERE: 17 Ways To Celebrate

Mezcal-Marinated Fajitas
A dish with a smoky, earthy flavor from the mezcal, while the fish sauce adds a little funk and saltiness. Interesting!

Mango Margarita
Margaritas need to be shaken, not stirred. Made with fresh mangoes, lime juice, tequila and Cointreau. Doesn't it look delish?

Insta Pot Chicken Tortilla Soup
This Mexican favorite is made in a flash. It's topped off with crunchy baked tortilla strips, greek yogurt, avocado, and cotija cheese for an easy, gourmet meal at home!

Spicy Fish Tacos With Tequila Lime Pineapple
My favorite taco always includes fish or seafood. Just by the title of the recipe alone, I can tell it is a winner. Adding the sweet pineapple to the spices is a wonderful idea, and will
balance the flavors.

Whole Roasted Chipotle Salsa Cauliflower
Roasted Cauliflower is a staple at my home. The trick to the beautiful brown color is "What's Gaby Cooking, Salsa & Guacamole Starter," at Williams Sonoma. Of course, you can make your own salsa like I would. Get the recipe at..
Bakers Royale

Spicy Rosemary Rhubarb Margarita
Homemade rhubarb syrup brings just the right amount of sweetness to this
chic cocktail!

Classic Flan
A Spanish and Latin American favorite.  If made correctly made, it is silky smooth and sweet.

A Cozy Kitchen

Shrimp Cerviche
Oh how I love any kind of Cerviche. This one just takes minutes to make, and it is filled with bold and zesty flavors.
Dinner At The Zoo

Killer Guac Three Ways
There are many things I would not buy pre-made...actually I buy nothing pre-made. But if I was to say which item I would never buy packaged, it would be guacamole. Can you just imagine the preservatives they must use to keep the color? These three recipes are all gorgeous and ever so easy! And all three are presented beautifully like above.
Feasting At Home

Chipotle Mahi Mahi Burrito Bowl
What makes this bowl stand apart from others is the addition of not just rice, but coconut lime rice, strawberries and mango salsa. What a
 creative combination!
Half Baked Harvest

Crispy Pork Belly Tacos with
Pico de Gallo
Chef Enrique Olvera stuffs tacos with crispy pork belly, confited in fat, and serves them with a tangy salsa spiked with Mexican beer. Doesn't that just sound yummy?
Food and Wine

Lime and Coconut Tres Leche Cake
Doesn't this just sound wonderful? The recipe has been changed up and improved with coconut milk, instead of the  classic cake made with whole milk.

Chipotle Beer Shrimp Quesadillas
The quesadillas are  stuffed with shrimp mango and tomatoes.  And best yet, you make them in a skillet, No need to turn on the oven. This is a good one, people!
How Sweet Eats

Tequila Sunrise
This has been my drink of choice in the past. I think I liked it because they are so pretty.  And they couldn't be
easier to make!
