Vegetables: Recipes From Mother Nature

Here's a little inspiration straight from the earth and Mother Nature. If you really want to live a healthy life, it has been proven that less red meat and more vegetables is the way to go. But those veggies don't have to be boring. This recipe roundup is proof of that. Think creamy coconut basil sauce, roasted red pepper bloody  marys and so much more.

Farmers Market Pickled Crudite
Platter
Something different. Truth be told, I have never pickelled anything except for cucumbers, and they are great. This dish will be a surprise for your guests. Add the homemade pesto, hummus, and ricotta cheese, and it becomes classic fare.

Moroccan Carrot Salad With Pistachio & Mint
This is a delicious spring salad that is packed with flavor and color.

Summer Rolls
Oh how pretty! I would eat these spring, summer, or fall. They are served with a creamy coconut basil sauce for dipping.
Love and Lemons

Mediterranean Nachos
Here's a creative and healthy-ish take on the classic cheese laden snack. It involves pita chips, hummus, greek yogurt, feta, olives, cucumbers, tomatoes, and chick peas.
Leite's Culinaria

Grilled Romaine Salad
Have you ever tried this? The romaine is so good grilled, but timing is everything. It's not totally vegetarian, because of the bacon, but you could omit that. It's yummy.

Heirloom Tomato Tart with Ricotta and Basil
This recipe is a real showstopper for any summer table. It's finished with a sprinkle of Maldon Sea Salt.

Buffalo Cauliflower Lettuce Wraps
If you are watching your carb intake, this recipe should be on your list. It's easy to make and has a zing from the buffalo sauce that is a nice contrast to the creamy avocado. What a pretty platter these will make!

Cauliflower "Pepperoni" Cheese Pizza
Spoiler alert, there really is no pepperoni involved with this recipe. This dish is significantly healthier than the traditional pizza. Hate to tell you that pepperoni is one of the most processed meats around. So the spices in the recipe are key to add the zip to the dish.

Crispy Baked Asparagus Fries
Here's a taste of spring in every bite. These are baked in the oven, then served with a tangy lemon dijon dipping sauce. Yum!

Spaghetti Alla Primavera
The perfect spring/summer pasta recipe.
It's not all just veggies, though. There is a little heavy cream that makes it a bit indulgent.

30 Minute Veggie White Chili
One might traditionally think of chili as a winter dish, but this last week has not felt like spring in the northeast at all. I could use a bowl of this right now. The creaminess comes from Greek yogurt and white beans. Might try this over the weekend.

The Best Veggie Burger
I have enjoyed a few veggie burgers in my day, but never actually made one. This one is made with chickpeas and quinoa. You will also find carrots, mushrooms, walnuts, and more nutritional ingredients.

Cucumber, Dill, Feta and Pistachio Salad
Doesn't this look refreshing? This is a good recipe to bookmark, and serve on repeat this spring and summer.

Roasted Red Pepper Bloody Mary
I think we can all agree that a bloody falls in the "vegetable" category.  In fact, this cocktail has so many veggie garnishes, it's almost a salad.
Cheers!
