It's finally Spring, even though I have the heat on at the moment. The sign went up for the Farmer's Market down the street yesterday. Fresh spring greens are just around the corner. From watermelon radishes to edible flowers and perfect pea pods, these recipes highlight the season's brightest produce.
Spring Cobb Salad
Let's begin with one of the prettiest salads you ever saw. Those watermelon radishes get me every time. I am hoping that my local farmers market has them. This salad is dressed to the nines with a fresh, light, honey-Dijon vinaigrette.
Spring Greens and Flowers Salad
Oh how beautiful. It's not often you are served a salad with an edible flower in it. The mix of greens is quite unique, and those flowers are available at WS, too.

Very Berry Dream Salad with Chili Mango and Peanut Vinaigrette
This may become your very favorite dressing. It's a healthy dish with those berries, and practically vegan minus the cheese.
Chicken Avocado Salad With Radish, Celery, Pistachio and Green Onion
A super healthy salad that is filled with good fat like avocado and olive oil. The dressing is simple
and citrusy.
Sesame Roasted Asparagus, Egg and Bacon Salad
If anything screams Easter it is this recipe! Actually, it is a perfect brunch dish for any special occasion.
I just love a salad with that features sweet and salty. The crunch comes from slivered almonds and salted pistachios. It's all dressed in a Champagne Vinaigrette. Not difficult but still impressive!
Scallops with Cucumber Salad & Mascarpone
The crisp cucumber salad is the perfect pairing to the buttery mascarpone and scallops. A company worthy dish for sure.
Gorgeous, right? More importantly, it is healthy. And if you haven't tried salmon with salad, you are missing out. The honey mustard vinaigrette not only dresses the salad, but flavors the fish, too.
French Potato Salad
"A simple French Potato Salad with fresh herbs – tarragon, parsley and chives, with a flavorful Dijon Vinaigrette. Healthy, vegan and light with no mayo!" I wonder why our mamas never thought of using colorful potatoes?
Of all of the lettuces, radicchio is my favorite. And it certainly is the most colorful. It's a modern spin on a classic.
Southwest Chicken Salad
My kind of salad. It will be yours, too, if you like bold flavors. It's a main course type of dish, that's dressed with a creamy avocado dressing.
This recipe had me at "tequila." Sorry to say, however, there isn't a touch of booze in the salad. The back story is that the salad originates from a Minnesota restaurant. The history is fun. And the recipe is filled with texture and flavors.
