I love a good salad, don't you?  For me, the definition of a good salad does not include your basic lettuce and tomato mix. It has to be interesting. Life is just too short not to get creative with a salad. This recipe roundup is anything but boring. If your body is showing the results of quarantine eating, it's time to put down the sugar and starch, and mix up some veggies!
