This week has been so hot, salads were our "go to" dinners. With all of the fresh produce and fruit, why not? Here's inspiration for your own warm weather meals and side dishes. I've included some really handy tools of the trade, too. Enjoy!

A day without some avocado for me is like a day without wine. Both are equally important to my health! :) You don't eat this salad for weight loss, but instead for it's fresh flavors and that dressing. Oh my!

Perhaps the best side dish for summer. it can be made ahead of time, so it is perfect to bring to a barbecue or picnic. It is really more than just corn, there's avocado for creaminess, sweet red bell pepper, shallots, and basil. It is simply dressed in a lemon and olive oil dressing. Come August 1st, I am all over this recipe.
