As the weather warms up (some day) our eating habits tend to change. It's time to think about dishes that are light but satisfying. These 12 recipes feature tender noodles, the best of spring's veggies, and light zesty sauces.   Enjoy and Mangia!

An elevated pasta recipe that's also simple.  The lemon brings on the bright spring flavor

Pesto Zoodles
The perfect recipe for the person who shys away from pasta, like myself. It's made with spiral zucchini "zoodles." Topped with homemade pesto which takes everything up a notch. Going to try this recipe soon.

Paccheri and Cheese with Peas and Mint
I always love a dish that can be presented so attractively. In this case, you bake the recipe in a springform pan. Brilliant!

Tomatoes and Eggs
Anything with an egg on top gets my attention. Under the egg you will find garlic sauteed mushrooms, crisp asparagus, and noodles swirled in olive oil.
